Matzo Meatloaf

Meatloaf is one of my all time favorites… it brings me back to my childhood. My mother used to make meatloaf at least once a week with a side of mashed tators. She would scream out the window to my brother Morty and I to come in to the table. We never had a problem leaving the stickball game to run inside for mom’s meatloaf.

Serving Size: 6-8

Ingredients

1 pound ground beef
½ pound ground veal
1 egg, beaten
2 tablespoons parsley
2 tablespoons basil
1 garlic glove, minced
¼ teaspoon salt
1/8 teaspoon pepper
½ cup canned tomatoes, crushed or diced
1 small onion, chopped fine
3 matzos, ground fine

Preparation

Preheat oven to 350

In a large mixing bowl combine ingredients well

Place meat mixture in a 9 x 5 x 3-inch loaf pan

Bake for 60 minutes

Always listen to your mother.

If meatloaf is made correctly should it be kind of dense and not fall apart when you slice it?
I’m trying to create a meatloaf that is right but, I’m not exactly sure what a real meatloaf is as far as texture goes.
