March 25 2009 Bernie’s Famous Matzo PizzaThis is my all time favorite. It is not just some sauce and cheese slopped on matzo. It is a whole to do with layering and olive oil…check it out. Serving Size: 1 as a meal, 4 as a snack or appetizer Ingredients1 tablespoon olive oil, divided PreparationPreheat oven to 350°F Place 1 matzo on a baking sheet. Use a basting brush and smear 1 side of matzo with a thin coating of olive oil, about 1 teaspoon. Smear ¼ cup of tomato sauce on the matzo, spread evenly from end to end. Sprinkle with 1 tablespoon of Parmesan cheese, 1/8 teaspoon each of oregano, garlic powder and crushed red pepper. Cover matzo with ¼ cup of mozzarella cheese. Place second matzo on top of first layer. Repeat steps starting with the olive oil and ending with the remaining mozzarella cheese. Bake for 10 minutes and then broil for 2 to 3 minutes depending on how brown you like your cheese. I like mine nice and brown. Gertie likes hers less brown.
