BBQ Chicken Matzo Nachos

This recipe is inspired by the nachos I ate at Planet Hollywood at my grandson Seth’s birthday party. They taste just like em!

Serving Size: 2 servings as a meal, 8 as an appetizer

Ingredients

1 whole chicken breast (½ pound)
2 tablespoons and 1 teaspoon olive oil, divided
1 small onion, sliced thin
2 matzos
2 tablespoons and 2 teaspoons BBQ sauce, divided
½ cup shredded Jack cheese, divided
½ cup shredded Cheddar cheese, divided

Preparation

Preheat Broiler to high

Heat 2 tablespoons of olive oil in medium skillet over medium heat. Allow oil to heat about 30 seconds.

Place chicken in skillet and cook through about 4 minutes on each side. Chicken should be white inside, not pink. Remove from heat.

Heat 1 tablespoon olive oil in a small skillet over low heat. Allow oil to heat about 30 seconds and then add onions and sauté.

Shred chicken with a fork.

Brush 1 tablespoon of BBQ Sauce on the surface of 1 side of each matzo.

Split shredded chicken into two even portions and place one portion on each matzo to cover.

Split onions into two portions and place on top of chicken.

Put ¼ cup Jack Cheese and ¼ cup Cheddar cheese on top of chicken on each matzo.

Drizzle 1 teaspoon of BBQ sauce on top of the cheese on each matzo.

Broil on high for 5 minutes.

Bernie's Tip

Cut each matzo into 4 squares with a pizza cutter.

Oh, my.  This recipes sounds delicious.  However, it should be stated at the beginning of the recipe that this recipe does not follow the Jewish dietary rules.  One who keeps kosher or follows the rules does not mix meat (the chicken) with diary (the cheese).  One who knows the rules can figure out on their own how to adapt the recipe.  However, who someone who is only learning or does not know, the recipe can be misleading.
