Baked Matzo Meatballs

This recipe is inspired by Tyler Florence’s “Ultimate Meatballs Al Forno” 

Serving Size: 6

Ingredients

1 pound ground pork
1 pound ground chopped meat
2 eggs, beaten
½ cup grated Parmesan cheese
3 tablespoons chopped fresh parsley
3 tablespoons chopped fresh basil
1 garlic clove, minced
¼ cup and 1 tablespoon extra virgin olive oil, divided
¼ teaspoon salt
1/8 teaspoon pepper
1/3 pound mushrooms, sliced
1 pint grape tomatoes, halved
1 cup shredded mozzarella cheese
5 matzos, ground fine

Preparation

Preheat over 350°F

Place pork, chopped meat, parsley, basil, and garlic in a large bowl.  Combine well with hands. 

Add eggs, Parmesan cheese, walnuts, salt and pepper to meat mixture and combine thoroughly with hands. 

Shape meat into balls approximately 2 inches in diameter. 

Place matzo in a plate.  Roll each meatball in the matzo, make sure you coat the entire surface of each ball. 

Heat a large skillet over medium heat.  Add ¼ cup extra virgin olive oil and allow to heat (about 30 seconds).  Fry each meatball in skillet browning evenly on the entire surface.  Drain excess oil from meatballs on paper towels then transfer meatballs to a baking dish and set aside.

Heat a small skillet over medium heat.  Add 1 tablespoon extra virgin olive oil and allow to heat, about 30 seconds.  Sauté mushrooms in skillet for 1 minute then add tomatoes and sauté for 2 more minutes. 

Pour mushroom/tomato mixture over meatballs and sprinkle with mozzarella cheese.

Bake for 25 to 30 minutes until heated all the way through.

If you are giving Passover recipies, why in the H___ does this recipie call for Pork???  I know one can make “Kosher” subsitutions but please, next time, consider your audience!
